if you love salsa...

You will LOVE this.

Black Bean and Corn Salsa
2 cans black beans drained and rinsed
2 cans corn drained
1 red pepper chopped
2 tomatoes diced
6 green onions chopped
2 avacados - optional
1 serrano or jalepeno pepper finely diced (remove seeds for milder salsa)
few sprigs of cilantro finely chopped
Place above ingredients in a large bowl

Dressing:
1/3 cup lime juice (about 2 limes)
1/2 cup olive oil
1/8 tsp cayenne or red pepper
1/2 tsp salt
2 cloves garlic

Wisk dressing and toss with salsa ingredients. Add more garlic to taste!

I can seriously eat this by the spoonful! It is THAT good. MMMMM. Make it. You won't be disappointed.
